Preventing Dreaded Orange Spots and Rancidity

Every soapmaker, sooner or later, meets the dreaded orange spots — those little amber freckles that bloom across a once-pristine bar, often trailing a faint, crayon-like smell. We call them DOS, and they are the visible signature of rancidity. The good news from the workbench is that DOS is almost always preventable once you understand what feeds it.

What is actually happening

Rancidity is oxidation. The unsaturated fats in your soap react with oxygen, and the spoilage races ahead wherever trace metals — iron, copper, nickel — sit in the bar. Those metals arrive quietly: in tap water, in well-loved aluminium or cast-iron tools, and even as impurities in the oils themselves. Where a speck of metal meets an unsaturated oil, an orange spot is born.

Start with fresh, sound oils

Your bar can only be as fresh as what went into it. Oils high in polyunsaturates — soybean, sunflower, grapeseed, and tired old olive — oxidise readily, so smell every oil before you use it. A waxy, painty, or putty note means it has already turned; no recipe will rescue it. Buy in quantities you will use within a season, keep oils capped, cool, and out of the light, and lean on a generous share of more stable fats such as coconut, palm, tallow, or lard for a longer-lived bar.

Chelators and antioxidants

Two small helpers do most of the heavy lifting. A chelator grabs those stray metal ions so they can no longer kindle oxidation; a pinch of sodium citrate (or a little citric acid, accounting for the extra lye it consumes) works beautifully and is kind to the heritage spirit of the craft. An antioxidant such as rosemary oleoresin then slows the reaction itself. Used together, they are the closest thing we have to insurance against DOS.

A word on lye, since these touch your recipe

Adjusting for citric acid means handling sodium hydroxide. Always add lye to water, never water to lye, or you risk a volcanic eruption. Wear goggles and gloves, work with good ventilation, and read our full safety guide before you begin. Storage, the quiet guardian

A flawless bar can still spot if stored poorly. Cure and keep your soap somewhere cool, dry, and dark, with air moving freely around each bar — never sealed in plastic, which traps moisture and breath. A shoebox with a loose lid, bars stood on their edges, suits most kitchens well.

Fresh oils, a chelator and antioxidant, and a dry shelf: master those three and DOS becomes a rare visitor rather than a regular guest.
